I slept in this morning and went for a 1-hour walk around 8:30 am – in the sun. I had a headache, so I took two aspirin and drank a lot of water before I headed out…and also took my Hydro Flask with me. Walking in the sun felt really good, like my body was really soaking up the sun in order to make Vitamin D, which I’m convinced that I’m slightly lacking…!
Breakfast was a red smoothie bowl with a new fruit that I hadn’t eaten before – Zapote fruit. It was surprisingly good. The taste was very intense and I don’t think I would be able to eat it just like that – at least not a lot. But it was perfect for my smoothie.
MORNING SMOOTHIE BOWL:
- Zapote fruit (half)
- Banana (2 small)
- Cucumber (half, no seeds)
- Beetroot (half, raw)
- Chia seeds (1 tbsp) soaked overnight in unsweetened rice milk (about 1 cup)
Blended until smooth and topped with coconut. Amazing!
Lunch came around really fast and I made A SALAD IN A BOWL with:
- Romaine lettuce (about 10 leaves)
- Tomato (1 small)
- Cucumber (the other half, no seeds)
- Soy bacon bits (about 1 tbsp)
- Leftover noodles with veggies
- Red quinoa (about 2 tbsp)
- Balsamic glaze
I was working on and off in the computer and feeling a little restless during the afternoon, like I needed something but couldn’t figure out exactly what. So, I made another smoothie juice and went outside to drink it in the sun.
AFTERNOON SMOOTHIE JUICE:
- Zapote fruit (the other half)
- Strawberries (frozen, about 1 cup)
- Banana (1 small)
- Melon (1 slice)
I also had a few tortilla chips with some homemade hummus. For dinner, I’ll have leftover fried rice with veggies, sausage and eggs that I made last night.
